Our kitchen works with the local fishermen of the area to bring whatever is fresh straight to your plate. This sea to table approach combines healthy ingredients together in a coastal themed, fusion-style menu with Colombian, Latin and Asian flavors. Our ever-evolving selection is a unique combination of the traditional dishes and flavors from Colombia along with other recipes from around the world.
We are passionate about supporting our community and using the most local ingredients available, including fruit, veggies and herbs from our own gardens and fresh-caught fish and seafood from our regional fisherman.
Tropical juices are one of the most spectacular culinary traditions in Colombia, which is why we honor and serve them here daily. Our plethora of seasonal fruits includes: Passion Fruit, Star fruit, Guava, Lulo, Mango, Pineapple, etc. Fresh fruit and herb infused cocktails are also available per request.
The menu changes daily and three gourmet meals are included daily in the per person rate. This includes fresh fruit juices, bottled water, coffee and tea. Our kitchen can accommodate any vegetarian, vegan or gluten-free requests as long as you let us know in advance prior to your visit. Also, please let us know when you make your reservation if you have any allergies or if there are certain foods you do not eat. We need to know this information when you make your reservation so that we can let our chefs know in advance.
From our Gitana Bar, you can order coctails, beer, wine, liquor, sodas, smoothies and additional fruit juices as well as varios snacks. All of these are at an additonal cost and are not included in the daily, per person rate. If you choose to bring your own bottles or wine or liquor, please be aware that they will be subject to a corkage fee.
